My favorite pie to make during Christmas time is a cream cheese lime pie. It's super easy to make! I've also made it with Oranges with a chocolate cookie crust and you could also put lemons in it too...
You'll need:
- 2 regular size graham cracker crust pie shells
- 1 can of eagle brand milk
- 2-3 limes
- 2 containers of softened philadelphia cream cheese (the ones that come in the box)
- 1 container of cool whip topping (medium or large size)
- butter
- green food coloring (not necessary, but looks cool)
- colored red or misc. colored sprinkles if you like...

Directions:
Melt a couple tablespoons of butter in the microwave and brush on the pie shells, covering the whole surface. Bake the pie shells until golden brown in the oven at about 300 degrees for about 5-10 mins. on the high shelf. When golden brown taken the shells out and let cool. While you are doing this you can make the filling.
In a medium to large bowl, mix the softened 2 containers of cream cheese, 1 can of eagle brand milk, and squeeze the 2-3 limes in the bowl. I also scrape some of the inside part of the lime in the mixture and also some of the zest of the skin of the limes, for added zing to the pie. Blend everything together with a mixer until smooth. (The softer the cream cheese is before mixing the easier it is to blend, so it's not lumpy) Add a few drops of green food coloring when mixing. Once throughly blended put half of the filling in 1 pie and the rest in the 2nd pie. Top with Cool Whip and sprinkles. Cover with the provided graham cracker pie shell plastic tops and chill for 30 mins, until serving. Can also be frozen if you like, but let pie sit out for 10 mins. before serving if you freeze it. Enjoy!
